Dao Xiao Mian

一人前を長い長い一本の麺にのばしながら、沸騰した湯の中に飛ばし入れていく一根麺。ゆで上がった麺は程よくコシが強くのどごしのよい一品。好みの汁、具入りあんかけをかけていただく。長寿の象徴とされている。誕生日に食べるのは一本数メートルの麺。ここまで細く均等に遠くまで飛ばした日本人は黒田弘が始めてだといわれている。

This type of noodles is to make a very, very long noodle string with the material for one meal and boil it. Boiled noodle should be hard at a certain degree. Adding preferred soup and ingredients to make it a great noodle meal. Thin and long one-string noodle implies the meaning of living a long life- the symbol of long life in many oriental cultures. The length of the noodle string made for a birthday meal can be as long as tens of meters. The Japanese first innovated in making this equally thin and “flying far” noodles as an invention in the world.
